GLUTEN FREE MAPLE PANCAKES

makes about 12 pancakes

Ingredients:


1/2 cup brown rice flour
1/2 cup oat flour
1/2 teaspoon cinnamon
1/4 teaspoon cardamom (optional) pinch of salt

1/2 teaspoon baking soda
1 tablespoon of maple syrup, plus more for serving
2 tablespoons of chia seeds
1 egg
1/2 teaspoon vanilla
1-1 1/2 cups milk/alternative milk of your choice (buttermilk is a great choice) coconut oil, butter, or ghee for frying (about 2 tablespoons total)

Directions:

  1. In a medium bowl, whisk together flours, spices and baking soda until combined

  2. Stir in milk of choice (start with one cup), maple syrup, egg, chia seeds and vanilla and

  3. Add more milk if needed, the batter shouldn’t be too liquidy

  4. Preheat a pan on medium high heat and heat your cooking oil of choice

  5. Scoop about 1/4 cup of batter at a time and cook until bubbles begin to form before

  6. Cook on the other side until golden brown

  7. Serve with fresh berries, banana or more maple syrup

*These pancakes are great with the addition of chocolate chips if you’re making them with kids and want to give them a little treat!
